Great singer Music artist

Last week a great singer of Sri Lanka passed away.   It was very sad mood in Sri Lanka about this sad news.
My mother likes music a lot and since we moved in Sri Lanka she sometimes listens to music with the radio and she listens often to Shinhala music, too.
When we have opened the restaurant in 2000, he visited our first restaurant.   We did not know about him but the staffs told us about him.   We knew that he was the famous singer in Sri Lanka.   We met him a few time though he was very kind and did not show who he was.
When we heard about the news, we were very sad also and remembered about it.  We send our deep sympathies and condolences to his family and Sri Lanka.

HOCHO Japanese knives 包丁

These are typical Japanese kitchen knives which we call Ho-cho.   When we visit Japan, we see many tourists from foreign countries purchase these knives.   We also visit Japanese knife shop for their maintenance.  Even we use them everyday and make them sharpen though it is necessary to ask their professional  maintenance by the craft persons.  We visit the craft persons everytime when we go back to Japan.  The most distinguishable point of Japanese kitchen knives is variation of the thickness of the blade and most blades are thin.   When we cut fish, we use very thick blade-knife and use thin blade knife for other cooking.  At the beginning to open the restaurant Cafe Japan in 2000, we were very surprised that one staff used our knives to cut plastic bottles and Coconuts` shells!   Usually we separate the tools up to the usages.    Strictly cooking knives are for only cooking.   Finally we found our knives after cutting Coconuts` shells were terrible and we cried.  He used thin blade knife to cut a hard coconut shell!  Now we can say it was an interesting culture shock and no anymore mistakes after that. The oldest Hocho which we have started to use when we opened Cafe Japan in 2000 has now very short blade.   We are using it for cutting meat.

Cafe Japan Made MIso Soybean paste

We made Miso - soybean paste by ourselves since we opened the restaurant in 2000.   To get Miso paste in Sri Lanka was very hard and very expensive especially those days.   If we use those imported Miso paste, we have to add the menu price at the restaurant.   To avoid the cost increase, we started to make Miso paste by ourselves.   We wanted the customers to visit our restaurant even everyday and make the price low.  In the beginning, it was difficult to make Miso paste and we have failed many times until we succeed to make the good quality Miso paste.  Miso paste can not be made in one day but more than a month and more.  When we could make a good quality of Miso paste finally, we were so delighted.  Since then, we have tried to serve tasty foods with reasonable as less expensive as possible to the customers.  Wish you like our miso taste.

This is Miso just made.  You can not eat it yet.. 。

This is the completed one.  We can use for the restaurant.

OBON Japanese tradition お盆

Hello, everyone!   We have closed for a week and we will open from today as usual!  We are looking forward to seeing you again!
The season of this holidays is OBON period in Japan.   This is the period to think about our ancestors and those who have passed away and comemorate them.   We believed they would visit us this period and we have a lot of ceremonies depends on the cities all around in Japan to welcome them.   I would like to introduce about our tradition.

There are many type of welcome and send-off light and this is one of them.   We fire at the first beginning to welcome them without losing their ways.  We call Mukae-bi which means the welcome fire.    And the last day we fire to send them off to their home and playing for coming back again the next year.  We call Okuri-bi which means the sending-off fire.

Some cities fire on the slope of mountain and draw some Chinese characters like  大 shape.   Some cities flow lanterns on the river and sea.    Those have also the same meaning of Okuri-bi  to send them off their home.

We decorate the horses which made from cucumbers and the cow which made from eggplants (aubergines).   The horses are made for the ancestors and those who have passed away to ride to come to see us fast.  And the cows are made for them to go back to their home slow and bring a lot of suveniors.
Japanese famous BonDance also comes from this O-BON.   One of ceremonies for Obon.  It has been started to welcome and send off our ancestors and those who have passed away.   Bon Dance has also historical, religious, and traditional meanings.

Daikon radish

We are making Daikon Oroshi which means grated Daikon radish.   We use Daikon radish often in Japanese cuisine and eat raw, boiled and grated.  Daikon especially fresh daikon radish contains diastase to help digestion and good to stomach.   We use raw Daikon radish in Sashimi fresh fish and diastase works when it will be taken with fish and raw daikon radish.  Sometimes we grate daikon radish and put Tempura sauce as sauce will stick more foods and tasty slight bitterness.   Many foreign customers ask often about grated Daikon radish or just ignore it though we wish you try them with foods and sauce.
When we opened the restaurant around 2000, it was very difficult to find Daikon radish though now we can see very big grown Daikon radish at the market in Sri Lanka.

Noren - Face of Cafe Japan

I wrote about Noren - Curtain at the entrance in the blog.  We change to new from the new year!  If it is hanging on the entrance, it means 'We are Open!'.   Don't hesitate to come inside.

Our favorite pictures and thanks

It rained this afternoon after a long sunny days.  We had a repair of gutter this morning and finally it was finished before raining.  We thought it was lucky though we knew there was a leak from the roof.  lol   We have to go for the roof repair....
A big demonstration by the university students were held today and caused a heavy traffic jam along the Galle road in Colombo3.  We knew it during the heavy traffic jam but we had to send food.   Finally, a staff left his motorbike and walked along Galle road to the customer's office!   We are sorry for both of the customer and staff and thank to both of them.  The customer understood the situation and waited for food with patient.  We are also happy to work with such a good staff! And another customer had to leave Cafe Japan before having lunch as his arrival was delayed by the traffic jam and had to go back to his office.  But he wished us a very happy new year and left a present with smile.   I'm very sorry and thank you for visiting us today!
Did you notice that we have a new picture at the restaurant?   It was a present from a friend Allen.  When he visited Sri Lanka, he left the picture to express us his thanks. Finally the frame was completed!!   Don't you think it is beautiful?  Thank you, Allen!
And this is another gift  from a Japanese customer.   When we faced a business difficulty, he knew it and gave it us to make us cheer up.   Whenever we see it, it gives us encouragement even now.

Banana Milk

On a summer holiday, one family visited Cafe Japan. I knew I have seen them but I could not remember them. When I asked drinks, a girl told she would like to have Banana Juice. ?? Banana juice? I wondered. However, finally, we knew why she asked Banan juice. It was appeared that they lived in Colombo till seven years ago. And she used to drink Banana Milk one of our popular menu at Cafe Japan those days and she would love to have it again. Sorry I was totally forgotten about the menu and could not get it. If we knew why she ordered it, we could make it for her somehow. However, before they left, they told they visited Sri Lanka with family after 7 years and she became 16 years old now. It has already passed 10 years when she moved to Sri Lanka as a 6 year-old girl. We were so happy to meet them up again and glad to visit Sri Lanka. I made Banana Milk though they have already left. Thank you for visiting us so happy to see you!

AD on the magazine 広告

We have never thought about the advertisement though finally we have started it from February 2009. We asked a friend photographer and learnt how important to tell our concept him in order to have good pictures. As for the content, I'm asking a friend to correct my English though it has not been done on this blog. The tale of Cafe Japan has started from May and the episode will be updated every 3 months. Now we are enjoying to create the episode and advertisement. Don't ask us why Naomi?

Do you know 'Cheese Kottu'? 'Kottu' is one of typical Sri Lankan Foods. And I heard it is popular this 'Cheese Kottu' among the local people. Some shops are selling this fusion foods cheese and traditional Kottu. Since I like cheese I can not stop trying it when I have found this menu at the shop. I thought Cheese were mixed inside of Kottu though Kottu was covered with cheese and ovened lik Gratin. (Sorry, I have forgotten to take a picture.)

To tell the truth, we have tried the same thing to one of the Sri Lankan traditional foods '
Patis'. We have sold ' Cheese Patis' at the first Cafe Japan. We made Patis from the croute and used tuna and made taste mild. The patis and cheese were matched and very tasty. Cheese Kottu reminds me when we have had Sri Lankan snacks in our menu at the beginning.

Opening

'NAGISA's story reminds me the first time when we have opened the restaurant in 2000. For a few months, there were no customers and we became customers by ourselves and trained the staffs by ordering foods. I thought the logo on the wall 'Cafe Japan' was meant the Japanese restaurant and the customer would visit us soon. However, most of customers thought the restaurant must be owned by a local person and they never thought authentic Japanese foods restaurant.
One day, we have spoken to some Japanese ladies in front of Queen's Court. "We have opened Japanese restaurant 'Cafe Japan'. Please visit us when you have a chance." Then, those ladies visited us one day and it began customer visit us. And other young couple also visited Cafe Japan and she cried ' I have waited for a long time to come such a restaurant!' They liked our foods and later their colleague told us that they liked Cafe Japan and they made photocopy of your menu and introducing Cafe Japan to their friends. We were happy to hear that and it gave us a lot of cheers.
Though, in those days, there were no air conditioners at Cafe Japan, a lot of customers visited us. Some foreign customers were surprised at the numbers of Japanese customers and said 'Little Japan'.
Now we think we were helped and supported by a lot of foreign (includes local) and Japanese customers. Otherwise, we don't know we are still here.

NAGISA (a shore / a beach)

Before we opened Cafe Japan in 2000, we have thought about the restaurant's name. Usually in Japanese, we are saying the 3 letters would be nice to remember and to be known among the customers and we thought about 'NAGISA'. Though our restaurant was not located along the coast, we have liked the name. We have other names, too like Dandelion, Sunflowers which are common flower names. Finally we have decided Cafe Japan after we have decided the location. It was located next to Mt.Lavinia Cafe (present) and there was a pretty antique house though there is nothing at all.
