Samma Japanese seasonal cuisine 日本の秋刀魚

Hello!  We would like to introduce a seasonal Japanese cuisine Samma Shioyaki grilled Samma fish.  Now it is a bit late but in season to have Samma fish in Japan.   We would like to start to serve this Samma fish from today.   We are happy to introduce Japanese specials to the customers.   Hope you would enjoy them!  We wish to understand that the number is limited as the seasonal foods.

A Sweet in Sri Lanka スリランカのお菓子

Hello everyone.  Thank so much for your partronages and we are happy to meet many customers everyday and encounters with new customers.  And thank you very much that we had an inquiry yesterday about 'Mochi' at this article.   We have answered at the comment column and please check it!

By the way, have you seen this sweet in Sri Lanka?  I have seen it in Thailand before and we have the same sweet in Japan, too.  This is a cotton candy and the way of sale is interesting.   In Japan, a cotton candy is sold with a stick.  I have seen the same type of cotton candy at the supermarket in Colombo so that this may not be the same as the cotton candy.  And this is sold by the man walking with a bell and a bucket around the town and we call him when we want to buy.  When we buy this candy, he gave it with thin snack like a crape.  Eat cotton candy with a crape.  It has a slight coconut flavour and very yummy.   Please try it when you find the sales person around your house!

さて、今日は、カフェジャパンのお話ではなく、スリランカのお話です。これは、スリランカのお菓子です。ご存知ですか?いわゆる、綿飴です。日本では、棒に綿飴をさして縁日などで売っていますよね。スリランカでも、同じような綿飴を見たことがありますので、もしかしたら、これは、また違う種類のお菓子なのかもしれません。このお菓子は売り方が面白くて、片手にベルを持ち、もう片方にバケツを持って、歩いて売っています。住宅街や人の集まる公園などで売っていますので、買いたい時は呼び止めて買います。今日は、家の前を通ったので、声をかけて買ってみました。以前、タイのバンコクでも同じようなお菓子を見たことがあります。バケツの中には、このような飴がたくさん入っていて、この飴とクレープのような柔らかいおせんべいをくれます。この柔らかいおせんべいをちぎって飴をくるんで食べるのですが、ほのかにココナッツの味がして大変美味しかったです。ぜひ、お見かけになりましたら、お試しくださいませ。

Frozen fish 冷凍の魚

Can you find what kind of fhish this is?  
This is Salmon.   As you know, we can not catch the salmon at the sea around Sri Lanka.   However Salmon is necessary for making more variation of the menu.    So what we have to do is we buy frozen Salmon and then we cut pieces and slices for Sashimi, sushi, and grilled.  The best is to taste soon after cut and clean the fish.   Very tasty.   The fat part of Salmon is called Harami and its delicacy is very popular especially among Japanese people.   Some may feel  too oily because of the fat, though.  Wish you enjoy tasty salmon at Cafe Japan!

小さくて見づらいかもしれませんが、何のお魚かお分かりですか?
答えは、鮭です。スリランカは、常夏の国ですので、鮭が水揚げされません。ですが、日本食には鮭はかかせませんよね。。そして、どうするかと言うと、冷凍の鮭を仕入れてさばくのです。ですが、状態もいいので、切り立ては一番美味しいです。そして、はらみもとっても美味しいです。お寿司もおいしいですから、ぜひ、皆様お試しください!

Manto Steamed bun with meat Japanese style スリランカで肉まん


Dear valued customers!
Thank you for visiting Cafe Japan and we are so sorry when it becomes crowded and ask for waiting for foods...  Thank you for your patients and cooperations. 
On the holiday when we closed the restaurant, we made steamed buns with meat.   It is common foods in Japan but we have to make them when we want to eat in Sri Lanka as we can not buy at any shops.  It is a good occasion to have home made foods when we need.  If we are in Japan, we may not make them by ourselves as easier to get them at the shops.  We sometimes try to make some new foods thinking about our new menu and taste and because we like to eat.   
いつも皆様のご利用ありがとうございます。時々、お客様が重なり混んでしまうと、食事の提供が遅くなり、大変申し訳なく思っています。それでも、お待ち頂きありがとうございます。早く、改善したいのですが、なかなかうまくいきません。。
お休みの日、食べたくなったので、肉まんを作りました。時々、新しいメニューや味を模索しながらお休みの日に作ったりします。久しぶりの日本の味はとても美味しかったです。なかなか、時間のあるときしか作れないのが残念ですね。。。日本にいたら作らないけど、手に入らないから作るんですよね。

This is our opening schedule in October. We close on Mondays and Tuesdays and we deliver foods on Mondays, too. And we are going to close the restaurant from 26 October to 5 November. We are sorry for causing inconveniences. HOCHO Japanese knives  包丁


These are typical Japanese kitchen knives which we call Ho-cho.   When we visit Japan, we see many tourists from foreign countries purchase these knives.   We also visit Japanese knife shop for their maintenance.  Even we use them everyday and make them sharpen though it is necessary to ask their professional  maintenance by the craft persons.  We visit the craft persons everytime when we go back to Japan.  The most distinguishable point of Japanese kitchen knives is variation of the thickness of the blade and most blades are thin.   When we cut fish, we use very thick blade-knife and use thin blade knife for other cooking.  At the beginning to open the restaurant Cafe Japan in 2000, we were very surprised that one staff used our knives to cut plastic bottles and Coconuts` shells!   Usually we separate the tools up to the usages.    Strictly cooking knives are for only cooking.   Finally we found our knives after cutting Coconuts` shells were terrible and we cried.  He used thin blade knife to cut a hard coconut shell!  Now we can say it was an interesting culture shock and no anymore mistakes after that. The oldest Hocho which we have started to use when we opened Cafe Japan in 2000 has now very short blade.   We are using it for cutting meat.
私たちは,色々な種類の包丁を使います。写真は、ほんの一例です。毎日研いで使っているものですが、定期的に日本に帰ったら、包丁屋さんに包丁の研ぎをお願いしています。やはり、プロの方に研いでもらうと切れ味がさらによくなり、包丁も長持ちするのです。
日本の包丁は色々な用途に合わせて使う包丁が違っていますし、スリランカでは料理に使う素材も異なります。最初、カフェジャパンを開店したころは、何もわからないスタッフが包丁でプラスチックのものを切ったり、ココナッツの殻を割ったりしました。その後、どうなったのか。。。ご想像にお任せします。。。今では、面白い出来事、カルチャーショックだと話すことができますが、当時は泣いても悔やみきれませんでした。最初にスリランカで使い始めた包丁は今でもありますが、とても小さな包丁になっています。
