This is our schedule in September.  We are very sorry but we close on 5th and 12th on Monday though we usually do Sushi and Delivery orders.  Wish to meet you at Cafe Japan!

Dear Valued customers;

We start to open for dinner from August.  We open dinner from Wednesday to Saturday from 6pm to 9pm and open just for lunch on Sunday.  Mondays are only delivery and take away.  We continue the course dinner as well and it is necessary the reservation in advance.  We are very sorry but in case when we have a reservation for private use, we may decline dinner use temporary.  We welcome anytime your inquiries.  Feel free to ask us before your visit.  Looking forward to seeing you!

Horse Mackerel 鯵

 

Very Fresh fish is available in Colombo.   And see.   These horse mackerels are so fresh!  Yummy.

活きのいい鯵がコロンボでは手に入ります。とってもおいしいですよー！

We often introduce the dishes of Horse mackerel but today Sashimi!
以前、鯵の一夜干しや鯵丼、お寿司の紹介をしましたが、今日はお刺身です！肉厚で美味しいですよ。

Hello! How are you?
This month we close the restaurant irregularly.
 We close from 10 to 14 July and Tuesday's.  We close restaurant on Mondays but do the delivery service.  Looking forward to seeing you at the restaurant!

スリランカは、相変わらず、暑い毎日です。月曜日は、宅配のみの営業、火曜日は定休日を頂きますが、今月は、7月10日から14日までお休みを頂きます。ご迷惑をお掛けしてすみません。皆さまのお越しを心よりお待ち申し上げます！

Ko-ji Rice malt 手作り米麹

During our holidays, we do some work and making Miso paste (soybean paste) is one of our duty.  To make Miso paste, we need Ko-ji (Rice malt).    If we are in Japan, we do not need to make Miso paste and Ko-ji but here it is not easy to get Miso Paste and we have decided to make it by ourselves.  It is more tasty and more economical for us.  No addtives and very healthy, too.   We use this malt only for making Miso paste but other foods as seasonings.   For example, we use it for Fish dish.   Fish has more flavoured and juicy when it grilled. 
カフェジャパンが定休日の間、色々とやることはありますが、そのひとつにお味噌作りがあります。スリランカは気候的にも、発酵食品を作るのにとても適しているような気がします。パンも意外と美味しく地元の人に人気のパン屋さんで焼き立てのパンを食べると何とも言えない美味しい味です。
お味噌を作る前に、麹を作ります。米麹。とっても綺麗な白い麹ができました。この麹でお魚を漬ける塩麹を作ったり、お砂糖を使わない天然の甘さの甘酒なんかを作ったりします。日本でも大変人気なようですが、日本では手軽に麹が手に入るので、麹から作る経験はあまりできません。味噌も手作りする方もいるようですが、買った方が便利だし、スリランカにいるからしていることもたくさんあります。
